“I was eating eggless dough at my brother’s house and that tiny seed began to grow. I knew exactly what I was going to do when I got home.”

I have loved desserts for as long as I can remember. Growing up I cherished the smell of freshly baked challah in my maternal great-grandmother’s kitchen, the incredible butter cookies of my paternal grandmother and the made from scratch pies of my mother.

My first attempts to carry on the family tradition began with two simple but delicious recipes: the brownies that my mom made and Nana’s Butter Cookies. Once I graduated from college, I was able to learn and develop the skills that have brought me to where I am today. It is obviously a continuous learning process but oh, what fun it is.

As a stay at home Mom for nearly twenty-two years, I had the time to bake and I took full advantage of that time. In 2011, I created a blog called Desserts Required so I could at last share the decadent and user friendly recipes that I had enjoyed baking all those years for my family and friends.

In 2012 I was fortunate to have been given the opportunity to work part time in the office of a bakery. The owner is one of the most talented pastry chefs in the country. Not only could I benefit by seeing her magnificent finished products but there was also a bonus that happened quite by chance. You see, cakes were made to order, which meant that there weren’t any leftover slices available for me to eat. What that meant was that on most days I ate a frozen chocolate chip cookie dough ball for lunch. And so, the first seed was planted.

Three years later I was eating eggless dough at my brother’s house and that tiny seed began to grow. I knew exactly what I was going to do when I got home. It was time to turn my cookie dough ball love affair into something special and share it with everyone.

Happylicious by Betsy cookie dough and brownie batter balls are fabulous to serve for dessert, to enjoy as a grab-and-go snack, to pack into your lunchbox or to mix into your favorite ice cream.
